(Long Island, NY) Nutrition experts and a chef will discuss the benefits of a cancer-fighting diet at a free forum sponsored by the Adelphi NY Statewide Breast Cancer Program. The forum will be held at Adelphi University on Monday, May 2nd from 5 pm to 7 pm.
Discussing how proper eating can be a defense against cancer are Diane Dembicki, PhD, LMT, CYT, a clinical associate professor at Adelphi University who teaches courses such as “Human Nutrition” and “Nutrition in the Life Cycle” and nutrition graduate student Kaitlin Morris, MS. They will highlight cruciferous vegetables like cauliflower, broccoli, and Brussels sprouts and fruits and vegetables that are high in folate and dietary fiber; and legumes and whole grains.

“The trick is making this food look good and taste good,” says Dr. Dembicki and to help with that task are Helene Konsker, MS, RD, CDN, Nutrition Director, and Executive Chef William P. Wright, both of the Compass Group-USA, a foodservice and support services company.
Chef Wright will prepare a healthy grain salad of quinoa, jicama, mango, roasted asparagus and dried fruit with a shallot, lemon vinaigrette, while Ms., Konster discusses the health properties of the ingredients. Samples and recipes will be available.
This forum will be held at the Alumni House at Adelphi University (154 Cambridge Avenue, Garden City). Seating is limited and reservations are required.
